2 bags of fine cracked wheat (bulghur)
2 medium red onion
2 lbs lean leg of lamb
Salt, pepper to taste
1 bunch parsley, diced 3/4, remaining 1/4 cut to small nuzzles
1/4 cup diced mint leaves
1/2 cup Sultan Brand extra virgin Olive Oil

Directions
Rinse the cracked wheat in a separate bowl.
Let sit in some water
Puree 1 1/2 onion Dice remaining 1/2 onion
Cut lamb into small chunks. Use blender to mix to paste
Add all ingredients to meat paste, including cracked wheat (remove excess water from bowl before adding), spices and diced onions,
1/4 cup olive oil (save remaining 1.4 cup for garnish when done)
Smooth the kibbeh onto a large plate to about 1.4 inch thickness
Pour oil over kibbeh. Place parsley and mint bunches around as garnish
Eat using spoon/fork and/or pita bread
