Ingredients

1 1/2 cups Ziyad Whole Lentils


1 bunch scallions, finely chop


2 medium tomatoes, peeled


2 garlic cloves, chopped


1/2 cup coarsely chopped fresh


4 sprigs fresh mint leaves


1 1/2 teaspoons ground cumin


1/2 teaspoon ground red pepper


1/4 cup Sultan Gold Extra Virgin Olive Oil


2 tablespoons white wine vineg


2 tablespoons lemon juice


Salt and freshly ground black

Directions

Place the Lentils in a small pot and add water to cover. 


Bring to a slow boil. 


Lentil beans do not need to be soaked before hand and the cooking time varies depending on the firmness of the lentil bean. 


Cooking time can range between 10 minutes and 1 hour, depending on firmness. 


So, begin by cooking 3 minutes at a boil and reduce flame to a simmer. 


Continue to check the desired consisting of the lentils using a teaspoon. One cooked, drain any remaining water from the pot and set aside to cool while you prepare the salad mix. 


Mix the salad ingredients together in a serving salad bowl. Slice the tomatoes and add all ingredients and spices and then mix. 


Now add the cooked lentil beans. 


The meal can be served as prepared or chilled in a refrigerator and served later.
