Lupini Beans make an excellent snack, when they are prepared properly.
That means soaking them in water and rinsing and then re-soaking as many as four or five times over a five day period.
They can be cooked, once they are softened. But do not let the Lupini beans sit in the water for the five days to avoid any food contamination issues.
The beans should be soaked for 8 hours and then rinsed. And then soaked again. Over and over again over several days.
You will know when they are ready to eat when the hard bean becomes soft.
Once softened, simmer the Lipuni beans as you would any other legume bean, until they are tender. As a snack, sprinkle them with salt to taste, pepper and a little olive oil.
Offer as a side dish with olive oil, parsley, and lemon. Some prefer to add a sprinkle of pimento. The bean is eaten individually one at a time. Bite the "stem" of the shell to break open and then squeeze the bean out of the clear shell.
Most people do not eat the shell although some do.
The bean should slip out easily fo consumption and toss the shell into a side dish for refuse.
