Pancake mix

1 ½ cup of extra virgin olive oil (for frying)

3 cups Syrup (You can make your own syrup using sugar and water, or purchase syrup to your preference.)

Syrup

1 ½ cup water

1 ½ cup of sugar

Teaspoon of lemon juice

Mix together in pot and boil 20 minutes.

Filling:

2 cups White shredded sweetened cheese
(Also use ricotta cheese)

1 tbspn cinnamon

½ cup of sugar

Teaspoon ground Arabic gum

or

2 cups of ground walnuts

1 tbspn of cinnamon

½ cup of sugar, white or brown

You can also add other ingredients to the filling, including coconut shreds, or raisins if you prefer.

Kataif is a popular dessert that consists of an outer shell pancake, folded into a crescent (half moon) and filled with cheese or nuts and sugar. (Kataifi is a dessert that consists of shredded wheat.)

You can purchase the Kataif pancakes or make them yourself. You can make the pancakes using any pancake mix, circles of around six inches in diameter. But only fry one side.

Shred the cheese and mix all ingredients, or crush the walnuts and mix all ingredients. Place tablespoon of filling (either cheese or sugar nuts) in the center and then fold over to create a half-moon shape. Pinch the edges closed using your fingers.

Fry the entire kataif in a pan, two minutes on each side. Heat the syrup. Set aside and then soak with the hot sweet syrup. Serve hot or warm.
