Middle Eastern Date Spiced Cake

Yields1 Serving
 1 ⅔ cups Flour
 1 cup Sugar
 ½ cup Oil
 1 Egg
 ½ tsp Baking soda
 1 cup Water
 ¾ cup Ziyad Brand Walnuts
 ½ cup pumpkin seeds
 ½ cup Semisweet or dark chocolate chips
 ½ cup Ziyad Brand Raisins
 1 tsp Ziyad Brand Cinnamon
 ½ tsp Ziyad Brand Cardamom
 ½ tsp Ziyad Brand Ginger
 Pinch of Nutmeg
 ¼ tsp Salt

Boil the water, add the baking soda to it, then add the dates and let it soak for 30 minutes. In the meantime in a stand mixer, mix the sugar and oil. Add the egg, mix for 30 seconds, then add the flour and baking powder. Mix to combine, making sure to scrape in between. Add the nuts, chocolate, and spices.

Drain the dates, keep 4 tbsp of the liquid. Add the dates with the liquid to the cake mixture, mix all the ingredients, scrape the bottom and sides. Prepare the baking pan, I used a loaf pan but you can bake it in bundt pan to.

Prepare the loaf pan by putting parchment paper with the sides overlapping, spray it with cooking oil, then add the cake mixture. Bake in a preheated oven 350 F for an hour.
Check with a skewer if its done or if it needs more time you can bake it for longer time.

Note to know: The nuts are optional so you can add different nuts and dried fruits, depending on your preferences.
