Shelled Wheat and Chicken Soup

Yields1 Serving
 1 OnionFinely diced
 2 Garlic Clovesminced
 2 Carrots Peeled and diced
 3 Celery stalks Diced
 8 cups Chicken broth
 1 14 oz can crushed tomatoes or 2 tbsp Sera Tomato Paste
 ¾ cup Ziyad Brand Shelled Wheat, rinsed a few timesIf you presoak your shelled wheat the night before it will cut down on your cooking time. Make sure you drain and rinse before adding to the soup.
 3 cups Cooked shredded rotisserie chicken or 3 diced chicken breasts
 1 16oz can Ziyad Brand Canelini Beans Drained and rinsed
 Salt and pepper to taste
 1 Bay leaf
 2 tbsp Fresh parsley Roughly chopped to garnish

Heat olive oil in a soup pot over medium heat.

Add onion, garlic and cook until onion becomes slightly softened about 3-4 minutes.

Add carrots, celery and saute for another minute.

Add broth, crushed tomatoes, shelled wheat, shredded or diced chicken, salt, pepper, bay leaf.

Mix everything together and bring to a boil. Add the drained beans and let the soup simmer uncovered for 45-50 minutes or until shelled wheat is cooked through and tender. If the soup starts to get too thick, you can add in some more broth or water and stir often. If it's too thin, continue cooking uncovered for a bit longer until liquid is reduced.

Discard bay leaf.

Garnish with fresh parsley and enjoy!
