Ingredients
 3 cups Ziyad brand Roasted Eggplant (Medium & Chunky)
 6 cups tomatoes, seeded and diced
 1 tbsp garlic, minced
  cup cilantro, chopped
  cup parsley, chopped
 1 tbsp Ziyad brand Paprika
 1 tsp Ziyad brand Cumin Powder
 1 ½ tsp salt
 Pinch of cayenne pepper
 ¼ cup Sultan brand Virgin Olive Oil
 ½ cup water

Combine all ingredients in large skillet. Cover and simmer over medium heat for 30 minutes, stirring occasionally

Using a spoon, mash the tomatoes and eggplant. Continue to simmer for an additional 10 minutes, uncovered until the liquids are absorbed to create a thick consistency. Serve warm or at room temperature.
