In a large skillet or saucepan, heat the olive oil over medium heat. Add the onions and cook until soft and golden, about 5–7 minutes. Stir in the garlic and cook for another minute.

Add diced tomatoes and cook for 5–7 minutes, until the tomatoes break down. Stir in the red pepper paste, chili if using, cumin, and coriander. Cook for 2 minutes to allow the spices to bloom. Preheat oven to 350
