INGREDIENTS

  • 1 small onion, diced

  • 1–2 cloves garlic, thinly sliced

  • 1 tbsp Ziyad Red Pepper Paste (mild or hot)

  • 1 tbsp Ziyad Tomato Paste

  • 1 ½ cups water or stock (plus more if needed)

  • 1 cup #2 Medium or #3 Coarse Ziyad Bulgur Wheat, rinsed and drained

  • ½ tsp salt, or to taste

  • 1/2 tsp freshly ground black pepper

  • 1 tsp Ziyad Brand Ground Cumin

  • You can add any veggies you like. In this recipe we added chopped zucchini and green chili peppers.

  • Chopped flat-leaf parsley and toasted pine nuts, for garnish (optional)

A cozy Turkish-style bulgur pilaf cooked with tomatoes and spices—simple, satisfying, and perfect for everyday meals.

Directions

Step 1:

In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sliced garlic, and sauté for 4–5 minutes until softened and fragrant.

Step 2:

Stir in the bulgur wheat, tomatoes and red pepper paste, tossing to coat for about 1–2 minutes. Add in the veggies if using.

Step 3:

Pour in the water or stock , stir well, and bring to a gentle boil. Immediately reduce the heat to low, cover, and let it simmer until all the liquid is absorbed, about 15 minutes.
* If the bulgur is not fully in cooked, add an additional ½ cup of water, cover, and continue simmering until tender.

Step 4:

Once done, fluff the bulgur with a fork.

Step 5:

Garnish with chopped parsley and toasted pine nuts, if desired. Serve warm.
It’s delicious next to meats, stews, grains bowls and served with yogurt and a chopped salad.
