INGREDIENTS

  • 1/4 cup Sultan Extra Virgin Olive Oil, plus more to drizzle

  • 1 onion chopped

  • 1/4 cup Ziyad Brand Tomato Paste

  • 2 tbsp Ziyad Brand Hot or Mild Red Pepper Paste

  • 1 tsp salt, plus more to taste

  • 1 tsp Ziyad Brand Ground Cumin

  • 1 cup cucumber, finely diced

  • 1 tomato or red pepper, finely diced

  • 1 jalapeño diced, optional

  • 1 bunch green onion, chopped

  • 1/2 cup fresh parsley, chopped

  • 1/2 cup fresh mint, chopped

  • Juice of one lemon

  • 2 tbsp Ziyad Brand Pomegranate Molasses

A refreshing bulgur salad blended with crisp vegetables, fresh herbs, and zesty flavors. Wholesome and versatile, it pairs beautifully with mezze spreads and summer meals.

Directions

Step 1:

Cook bulgur according to package instructions.

Step 2:

Meanwhile, dice and chop all your vegetables and herbs.

Step 3:

In a frying pan, add the olive oil. Sauté the onions until translucent about 5 minutes. Add tomato and pepper paste and cook on low for about 3 mins, stirring often. Add salt, cumin, coriander and sumac.

Step 4:

Add the onion mixture to a bowl of cooked bulgur and mix to coat well.

Step 5:

Add in all the rest of the salad ingredients with the bulgur, pomegranate molasses, and lemon juice. Add a tablespoon of olive oil all over the top. Toss to combine. Taste and adjust the seasoning.

Step 6:

Serve right away with lettuce leaves as a main or next to a side of protein as a salad or a side dish. It is also delicious cold!
