Directions

Step 1: Prepare the chicken

Slice the chicken breasts lengthwise into thin strips. This mimics the texture of vertical-rotisserie shawarma and allows the marinade to penetrate fully.

Step 2: Make the marinade

In a large bowl, combine garlic, spice, salt, lemon juice, and olive oil. Mix until well combined.

Step 3: Marinate

Add the chicken to the bowl and toss until evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight for deeper flavor.

Step 4: Cook the chicken

Pan method (most traditional for home):
Heat a wide pan over medium-high heat. Add the marinated chicken (do not overcrowd). Cook until browned and slightly charred at the edges, about 6–8 minutes, stirring occasionally.
Oven method:
Preheat oven to 220°C / 425°F. Spread chicken on a lined tray and roast for 20–25 minutes, turning once, until cooked through and lightly caramelized.

Step 5: Serve!
