Ingredients

  • 1 lb Beef
  • ¼ lb Lamb with fat
  • 1 Medium onion grated and drained
  • Keep juice for later.
  • ½ cup Finely chopped cilantro leaves
  • 1 Egg white
  • ½ tsp Baking powder
  • 1 tbsp Cornstarch
  • or breadcrumbs
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Ziyad Brand 7 Spice Mix
  • 1 Packet of Ziyad Brand Liyye Seasoning
  • For a charcoal grilled flavor add 2 small hot pieces of coal with 1/2 tsp of ghee or butter in aluminum foil.

Mixture for brushing outside of Kofta

  • 1 tsp Tomato Sauce
  • 2 tsp Oil
  • 2 tbsp Onion juice
  • 1 tsp Ziyad Brand Pomegranate Sauce
  • 1 tsp Sugar

Directions

Step 1

For at least 10 mins by hand or in the food processor mix all kofta ingredients together minus onion juice until well combined.

Step 2

Heat up coal until very hot and red, immediately place in aluminum foil and add fat (ghee or butter). Place with combined meat mixture and cover tightly with aluminum foil, place in the fridge for 1 hour to rest.

Step 3

In the meantime, make your tomato sauce mixture by combining tomato sauce, oil, onion juice, pomegranate sauce, and sugar together. This will keep your kofta nice and moist while cooking.

Step 4

After an hour remove meat mixture from the fridge, and discard coal. Start forming kofta into desired shape and brushing on tomato sauce mixture on top. Repeat process until you have 10-12 koftas.

Step 5

Rest in fridge for 10 more minutes.

Step 6

After resting lay on grill pan over a pan with water to keep kofta moist.

Step 7

Bake at 450-475 degrees for 30-40 minutes flipping at least once halfway through.

Step 7

Once kofta is cooked all the way through (internal temperature should be 165 degrees F) plate and enjoy! Serve with a salad or pita bread.
