Olive Roll

Yields1 Serving

 2 cups Flour
 ½ cup Sultan brand Olive Oil
 ½ cup orange juice
 1 ½ tsp baking powder
 1 egg yolk
 Pinch of salt
 2 tbsp Ziyad brand Sesame Seeds (optional)
For the Filling
 2 cups Ziyad brand Uslu Black Olives, chopped
 2 cups Ziyad brand Cracked Green Olives, pitted & chopped
 ½ tsp Ziyad brand Ground Cumin
  tsp Ziyad brand Oregano
 2 tbsp cilantro
 2 tbsp red pepper paste
 2 tbsp jalapeño pepper

Combine flour and baking powder in a mixer. Add olive oil and mix until crumbly. Add orange juice slowly until the dough takes shape. Compress dough and let it rest for 30 minutes.


In a separate bowl, add olives, cumin, and oregano. Include optional ingredients if desired. Heat oven to 350°.


Separate the dough in half. Roll into a 10” square on greased or floured work surface. Spread half of the olive mixture in thin layer over the dough. Roll up slowly. Repeat with remaining dough and olive mixture.


Place both rolls on baking sheet. Brush top with egg yolk and sprinkle with sesame seeds.


Bake 30-40 minutes, or until golden brown and crisp. Remove and let cool so slicing is easier.
