Qamar al-Din Milk and Fruit Pudding is a delicious dessert that combines the tangy sweetness of apricot fruit leather with the creaminess of milk pudding. It’s popular during Ramadan but can be enjoyed year-round. Specially as a summer treat.
Directions
Step 1: Prepare the Qamar al-Din Mixture
- Cut the Qamar al-Din sheets into small pieces.
- In a small saucepan, combine the pieces with water.
- Heat gently over medium-low heat, stirring frequently, until the fruit leather softens. Add to a blender and blend till smooth.
- Set aside to cool slightly.
Step 2: Prepare the Milk Pudding
-
In a medium saucepan, whisk together milk, sugar, and cornstarch until the cornstarch dissolves.
-
Heat the mixture over medium heat, stirring constantly, until it thickens to a custard-like consistency. This should take about 8–10 minutes.
-
Remove from heat and stir in the orange blossom water or rosewater, if using.
Step 3: Assemble the Pudding
-
In serving glasses or bowls, pour a layer of the milk pudding at the bottom.
-
Top with a layer of the Qamar al-Din mixture, smoothing it with a spoon.
Step 4: Garnish with Crushed Pistachios and Serve
Let the assembled pudding cool to room temperature, then refrigerate for at least 2 hours to set.
