Za’atar Roasted Chicken

Ingredients
 2 lemons
  cup Sultan brand Olive Oil
 1 tbsp Ziyad brand Sumac
 1 tbsp Ziyad brand Allspice
 1 tsp Ziyad brand Cinnamon
 1 tsp Ziyad brand Paprika
 7 cloves garlic, crushed
 1 medium red onion, sliced or chopped
 ½ lemon, sliced
 4 chicken breasts or thigh, bone in, skin on
 3 tbsp Ziyad brand Green Za’atar
 2 tbsp Ziyad brand Blanched Slivered Almonds, toasted
 1 tbsp Ziyad brand Chinese Pinenuts, toasted
 1 cup chopped parsley
Directions

In mixing bowl, combine first 9 ingredients. Add chicken and coat all sides. Cover and place in fridge. Marinade chicken for at least 4 hours or overnight.

When ready to cook, preheat oven to 400°. Transfer chicken to a baking dish or cast iron skillet. Lightly sprinkle za’atar under the skin of each chicken piece.

Sprinkle another teaspoon of za’atar, sumac, and paprika on the outside of each chicken. Put in oven and roast for 40-45 minutes, or until thoroughly cooked.

Remove from heat and sprinkle with remaining za’atar and sumac. Garnish with toasted nuts and parsley.
