Mahshi, or stuffed vegetables, is a popular dish in Middle Eastern cuisine, especially comforting during the month of Ramadan. It typically involves hollowing out vegetables  like zucchini, eggplant, peppers, using a corer and filling them with a mixture of rice, ground meat, herbs, and spices.
