Step 1:
Preheat oven to 350°F and line a baking sheet with parchment paper.
Step 2:
In a large bowl, mash the bananas. Add the shredded coconut and mix well until fully combined.
Step 3:
Using a medium 1.5-tablespoon cookie scoop, scoop rounded balls onto the prepared baking sheet, leaving about 2 inches between each cookie. Makes about 12–13 cookies.
Step 4:
Place the chocolate chips in a small bowl and microwave in 20-second intervals, stirring each time, until melted and smooth.
Step 5:
Bake the cookies for 12–15 minutes, or until set and lightly golden.
Step 6:
Drizzle with melted chocolate and refrigerate for 30 minutes before serving.
